Scotch-a-what??? You say? Odds are, if you’re from the Midwest, you know what I’m talking about. You’ll also remember these if you ever took a math class with my mom. The rest of you may be clueless — but not for long! Scotcharoos are the best chocolate and peanut butter fix this side of, well, everywhere!

My love for scotcharoos began as a kid doing speed drills. Yeah, you heard that right. So, my mom was an elementary math teacher. Every week, we would begin a class with the thrill that can only come from a paper filled with rows and rows of multiplication problems. Picture it — pencils scratching, sweat dripping, and gum-chomping (but totally under the radar because gum was against the law in elementary school — though the underside of the desks told a different story) ending with the sharp trill of the timer that would leave us all dropping our pencils with a quick clickety-clack on the half-moon shaped wooden tables.
Mom was a great math teacher – but one of the things I remember most is the way she would bring home baked treats to class as a reward for reaching math goals. To this day, I associate math with sugary goodness. Honestly, wouldn’t you enjoy math more if you were able to munch on delicious home baked morsels of magnificence? Yes. Yes you would.
I remember nervously shifting in my seat, waiting for the moment when the prize would be revealed (now…I always knew what she was bringing because, hello, I lived with the woman). Without a doubt, the overwhelming crowd favorite was a panful of freshly made Scotcharoos.

Scotcharoos – Best Chocolate & Peanut Butter Fix: You’ll Need…
- 1 Cup Karo Syrup
- 1 Cup Sugar
- 1 Cup Peanut Butter
- 5-6 Cups Rice Krispies
Topping:
- 1 bag semi-sweet chocolate morsels
- 1 bag butterscotch chips

What You Gotta Do…
- You’re going to need to spray a 9×13 pan and set it aside – I use these pans
- In a saucepan over medium heat, combine the sugar and Karo Syrup – bring to a boil
- Remove from heat and add in the peanut butter – mix well
- Add in the Rice Krispies – HINT – use less Krispies for a chewier bar (old family secret *wink*)
- Pour Krispies into the greased pan and spread until the pan is covered
- In a another saucepan, melt the chocolate and butterscotch chips
- Once melted, pour over top the Rice Krispie mixture
- Let the chocolate set – then enjoy!

So…what’s funny about this is that I meant to grab some deliciously pretty pictures of these bars. Obviously, they didn’t last long enough for that to happen. Honestly. I’ve never seen a pan of goodies go as fast as these go. Straight down the hatch, as they say! These are a family favorite and I hope it will become one of yours, too (if it’s not already)! Maybe one day, I’ll be a able to snap a few Pinterest-worthy photos of the best chocolate and peanut butter fix EVER, but until then, peace, love, & light (after coffee), all!
